Tagaytay trades Manila's heat for altitude, and the bars know it — ridge-top decks and cocktail spots built entirely around the view over Taal. It's one of the great night-out drives from the city: cool air, a jacket, a cocktail in hand as the fog rolls in. Book ahead on weekends, and don't leave the sunset to chance.
